Better Than Takeout Fried Rice
Seriously, I’ve pinned this no less than 10 times on Pinterest and every single time it errors to a “blocked site.” enough pinterest. I figured I could probably guess how to do this based on some common logic and decided to try it out tonight! Here is what I came up with and it was sooo tasty!
Better Than Takeout Fried Rice
Ingredients
6 cups cooked brown rice
protein (chicken, shrimp, pork)
3 cups cooked, shredded chicken or pork
25-30 large shrimp, no tail, cooked
2 cups frozen peas and carrots
1 onion, finely chopped
4 eggs
1 tsp minced garlic
sesame oil
soy sauce
Instructions
1. Prepare rice as per the directions, set aside. I recommend you actually prepare the rice before you even start doing the rest of it. My rice took longer to cook than the box said and I was sitting around waiting for rice to cook while the rest of the food was done.
2. In a large skillet heat sesame oil and saute onion until transparent. Add peas and carrots. Cook until vegetables are tender, stirring occasionally. Add garlic.
3. Once the vegetables are tender, move the mixture to half the pan. Add the eggs to the other half of the pan and begin to scramble the eggs.
4. Mix the vegetables and eggs all together.
6. Combine protein and add soy sauce to egg/vegetable mixture. You can do this two ways:
A. Just add the rice and protein to this pan along with the soy sauce. Let the mixture “fry” in the pan. Let the rice get a little bit crispy (aka fried)
B. *my preferred method* I don’t have a pan big enough to hold all of these ingredients so I used a separate pan to fry up individual portions of the fried rice. I heated up some sesame oil, added some rice and a little bit of the protein & vegetable mixture. Added some soy sauce and let it all fry up for a few seconds. Then I flipped the mixture and let the other side fry.

You’ll Thank Me Later, Boyce Avenue
One of my bestest friends introduced me to Boyce Avenue and I still thank her no less than once a month for it. I seriously could listen to them on repeat… oh wait. I do. Boyce Avenue’s version of “faithfully” also happened to be my hubby and I’s first dance at our wedding.
If you don’t use Spotify, go download it immediately and pay for the premium so you can take your music with you everywhere you go. It is the best $9.99 a month that I spend. Just be careful because it does use a lot of data which I found out the hard way.
Anyway, Boyce Avenue is a (according to wiki) trio of brothers, American rock band that releases original music and also covers of popular music. Here are my favorite 10 Boyce Avenue covers to get you started. I linked to the youtube version in case you’re ignoring my idea of downloading Spotify.

Workout Wednesday: Abs

I’m starting of with everyone’s favorite.. abs! Abs are simultaneously my favorite and least favorite thing to workout. How Cute Are These?!
Hair Emergency
I need a change. I made it all the way to my 24th year of life before dyeing my hair…. less that one time in high school I used a semi-permanent red hair dye out of box. Doesn’t count. Now into my 25th year of life (I don’t know why I’m talking like this) I’ve dyed my hair 5 times and I love it. I wish I was more adventurous with my hair but I’m always scared if I cut it, it won’t grow back or if I dye it too much, it will become a gross texture. The struggle is real.
Here is a fun little timeline of my hair:
1. boring, brown hair
2. The first dye job was a pretty severe ombré. I LOVED it. Mark, not so much.
3. I wanted something more classic for our everlasting wedding pictures than ombré hair. I’m picturing my future preteen seeing pictures of ombré hair and asking “Mom, why did you let your roots grow out so bad before fixing them. Especially for your wedding.” Not interested in dealing with my future mini-mes antics. Went for a deeper brunette.
Now the dark brown has faded back to regular brown and I’m over it. I scoured Pinterest and came up with the following:
Should I try one of these styles? Or just let it go and let the sun lighten it however it wants.

Wedding Pics Preview Reel!!!
Our photographer and “new” friend over at Emily Millay Photography did such an outstanding job capturing our wedding day. Seriously, outstanding. I’m not sure how she narrowed it down to these for our highlight reel and I’m not sure how Mark and I are supposed to narrow it down and pick ones to print, but we will see.
